Flax Seed Muffins
This is right off the Flax seed box. Good for winter Sunday mornings.
Makes 12 muffins
Ingredients:
| 1/4 cup milled flax seed |
| 3/4 cup graham flour |
| 3/4 cup white flour |
| 1/2 cup sugar (Splenda® can be substituted for diabetics) |
| 2 tsp baking powder |
| 1/2 tsp salt |
| 1 egg beaten |
| 1 1/2 cup chopped apples |
| 3 Tbs Vegetable oil |
| 1/2 cup skim milk |
| 1/2 cup chopped nuts (optional) |
Directions:

Blend all dry ingredients together in a bowl. |

In a separate bowl combine eggs, vegetable oil and milk. |

Add dry ingredients to egg mixture and stir until blended. |
 |
Fold in apples and nuts. |
 |
Fill greased muffin pan until 2/3 full. |
 |
Bake for 18-20 minutes. |
