Flax Seed Muffins
This is right off the Flax seed box. Good for winter Sunday mornings.

Makes 12 muffins

Ingredients:

1/4 cup milled flax seed
3/4 cup graham flour
3/4 cup white flour
1/2 cup sugar (Splenda® can be substituted for diabetics)
2 tsp baking powder
1/2 tsp salt
1 egg beaten
1 1/2 cup chopped apples
3 Tbs Vegetable oil
1/2 cup skim milk
1/2 cup chopped nuts (optional)

Directions:

Blend all dry ingredients together in a bowl.
In a separate bowl combine eggs, vegetable oil and milk.
Add dry ingredients to egg mixture and stir until blended.
Fold in apples and nuts.
Fill greased muffin pan until 2/3 full.
Bake for 18-20 minutes.
